Cucumber, blueberry, chicken and feta salad

I love this salad,I love fruit with feta.  This salad is packed with healthy fats and protein, and it’s great for summer.

3 cucumbers peeled, seeded, and cut into half moon shapes
2-3 chicken grilled chicken breasts, I love to marinade them in Wegmans bbq chicken
2 cups blueberries rinsed
1 cup crumbled feta
Any balsamic dressing
Salt and pepper to taste


Make ahead mini turkey burgers

1 lb ground turkey

1/2 onion chopped

1 tbs olive oil

1 tsp italian seasoning

salt and pepper to taste

sliced sharp cheddar


I just mix all the ingredients in a bowl and take handfuls and round them out , about a palm full, I heat up a frying pan with a little olive oil and fry these up, once they are done, I use a meat thermometer because if you cut into these they tend to loose there shape, with no egg or breadcrumbs to hold them together.  I throw on a slice of cheddar and let it melt a little.  Let them cool throw one or two in some ziploc bags, great high protein easy to reheat meal.  Great to take to work for lunch.  I also sometimes chop up a little red pepper really fine and throw that is as well for some flavor. Also the portions are great for someone who has been sleeved.

Low fat greek yougurt veggie dip

1/4 cup light sour cream
1 cup greek  nonfat vanilla yogurt
1/2 garlic clove minced
1 tbs minced fresh dill
1/2 cucumber peeled, seeds removed, chopped fine
2tbs fresh lemon juice
1/4 cup diced red pepper
Kosher salt and black pepper to taste

I don’t mind it a little runny. If you want a thicker dip you could strain the greek yogurt over night with a cheese cloth and a strainer

Portable lunch for gastric sleeve

So when I was working in an office it was a lot easier to prep for lunches. I am now on the road all day so it’s getting a little tricky. Right now I pack a cooler with plenty of water and for my lunch I will pack half a pb+j sandwich. I use all natural pb and we make our own jam, and I put in on whole grain bread. Aldis sells a great whole grain bread. I also make pizza and freeze it, I just take a whole grain pita or rustic flat out bread and spread a little sauce add some mozz cheese some seasonings and veggies, bake them and these are great cold. I cut up all kinds of raw veggies and portion them out in snack bags at the beginning of the week. I also make my own greek veggie dip. I will post that recipe as well. Pack a snack size bag of grapes or apples. String cheese is a great option, also I always keep a small bag of nuts with me at all great protein pick me up. I try to stay away from cereal bars or breakfast bars, full of sugar and preservatives. I stopped eating lunch meat altogether, I was getting horrible migraines and lunch meat is a major cause for those it is full of nitrates and fillers. Tuna or chicken salad on whole grain pita or flat out bread, or wrapped in a romaine lettuce wrap. When I was in an office I would take leftovers from dinner or make a nice salad and top it withh a ton of veggies and tuna or chicken. Once in a while I would bring soup in but only homemade restaurants tend to load then with sodium. I hope this helps.

End of summer treat. Crab bisque


1lb lump crab meat
2 tsp butter
1 quart of seafood stock
1 chopped shallot
1 1/2 cups white wine,  I had a chardonnay open already worked great
1/4 tsp salt
1/3 tsp pepper
3 tbls tomato paste
1 cup of rice white or brown
2 cup heavy cream or fat free half and half

Sautee shallots in butter till soft,  about 4/5 minutes,  add stock, wine, paste and rice low simmer for 20 minutes,  add crab and heavy cream salt and pepper cook another 20 on low and enjoy so filing and some great alternatives in there to make it a little more healthy. .

Easy pureed/soft stage if you are craving Italian meal

So if you have seen your 1000th olive garden commercial and you feel like dying,  here is s great recipe for the soft foods,  pureed stage. ..

1 cup Any type of spaghetti sauce
1 cup of Ricotta cheese
Shredded mozzarella cheese
1 tsp Italian seasoning
1 egg opt for protein

Grease an 8×8
So I mix about 1 cup of ricotta with an egg and the seasonings,   spread that on the bottom,  put sauce on top, top with shredded mozz, don’t go crazy,  bake till brown and bubbly @350 about 20 min.  You could even mix the ricotta and sauce together is you prefer, I have done both and it’s filing.

Going out after gastric sleeve

So I wish there was someone to guide you through all of this in the beginning.  So I am going to try and help. I had a hard time with going out with friends and family when I first started this and especially going to parties.  In the beginning I would plan out my shakes so I would have one at the party the whole time.  Its just something to do with your hands and mind with all that good stuff there.   If we were going to a restaurant I would have a shake on the way and then order a side of potatoes or some applesauce, something easy and guaranteed not to make you throw up.  As I progressed I started packing my own food like one of my kids to take with us, do not be embarrassed people will be so proud of you, you have no idea and they all want to help.   I would always bring food because you never know what’s going to be there and or if you can digest it.   This will also be helpful to keep you on track.  Always, always have water with you, there should be no excuse for not having it. I will add more to this

Watermelon salad

So chris and I went out for a nice dinner for our anniversary and for my starter I chose a watermelon salad.   I have dreamed about that salad since I had it, it was so refreshing and so yummy I decided to make my own version, so here it is I hope you enjoy. ..

I whole cubed seedless watermelon – you will use about half
3/4 cup feta or honey goat cheese loveee goat cheese
1 bag of prepared arugula
1 english cucumber choped- remove seeds
1/4 cup sunflower or pumpkin seed
For dressing any vinaigrette or creamy dressing I personally love Wegmans yogurt dressings
